Simple Squash Sauté

I’m always on the lookout for easy but delicious ways to cook vegetables. This dish was inspired by a sauce Trader Joe’s used to carry, but discontinued. (Grrr.) The squash goes really well with roast chicken or a white fleshed fish such as Tilapia.

One small white onion, thinly sliced
Two to three cloves of garlic, thinly sliced
Three yellow crookneck squash, sliced about 1/4 inch thick
Three zucchini, sliced about 1/4 inch thick
Italian Herb Mix (McCormick Italian Seasoning ™ is good)
2 – 3 tablespoons tomato paste
Balsamic Vinegar, to taste
Olive Oil

Combine tomato pate and balsamic, mixing until you have the taste and consistency you like. I like the mix to be a brownish red, with a smooth consistency that isn’t too thin.

In a heavy pan, heat olive oil over medium heat until shimmering. Add onions and garlic, stirring until soft, about three minutes. Add the sliced squash and sauté until they begin to get tender. Add Italian herb mix to taste, stirring thoroughly. Cover and let simmer for about fifteen minutes, until all the ingredients are cooked, but not mushy.

Add tomato paste mix and stir in thoroughly, about two minutes.

Serves two to four as a side dish.
