Steamed Ginger Chicken with Asian Greens

Ingredients:

  • 4 boneless chicken legs, cut into 1" pieces
  • 1 tablespoon lemon juice
  • 2" piece of ginger, grated
  • Salt to taste
  • 1 teaspoon black pepper
  • 4–5 leaves of cabbage
  • 2 teaspoons sesame oil
  • 1 medium bunch of broccoli, cut into florets, blanched
  • 4 bok choy, roughly cut
  • 10 cloves of garlic, chopped
  • 1 tablespoon soy sauce

Directions:

  1. Place chicken pieces in a bowl.
  2. Add lemon juice, ginger, salt, and black pepper powder. Mix together. Set aside to marinate for fifteen minutes.
  3. Heat water in a steamer.
  4. Place a few cabbage leaves in a slotted pan. Place the marinated chicken pieces over them.
  5. Keeping the ingredients in the slotted pan, place the pan in the steamer, cover, and steam until the chicken is cooked. If you want, you can also grill a few pieces of the steamed chicken.
  6. Heat oil in a pan.
  7. Add broccoli florets and bok choy; sauté for two minutes.
  8. Sprinkle a little water in the pan.
  9. Add garlic, soy sauce and a little more water.
  10. Cook till the vegetables soften slightly.
  11. Transfer the greens into a serving plate. Place the chicken pieces over them and serve hot.
