Joe Froggers Cookies

In my mother’s Warner family cookbook, there is a recipe for Joe Froggers, oversized cookies made at Sturbridge Village in Massachusetts. Evidently, these cookies are their most popular treat. We agree!

Joe Froggers Cookies

2 cups sugar
6 cups pastry flour
2 teaspoons ginger
1-1/2 teaspoons baking soda
1/2 cup molasses
1 cup shortening
1-1/2 cups bread flour
1 teaspoon cloves
2 teaspoons salt
1 cup water
Rum flavoring

Directions:

  1. Cream shortening and sugar together.
  2. Put soda in molasses.
  3. Add, then alternate, dry and liquid ingredients.
  4. Chill covered.
  5. Roll out to 1/2-inch thickness. Cut with a very large cookie cutter or use a 2-1/2 -pound can, open at both ends.
  6. Bake at 375° F for 10–12 minutes. Makes about four dozen.
