Spam, an army surplus creation of necessity from yesteryear, still markin’ time … fake ham in a can, the all-purpose substitute for real meat. There’s a thousand ways to sundown to be creative with this popular item; here’s my top twenty that will entice and excite your ol’ taste buds.
S.O.S.: You betcha, baby! This classic meal made with cubed Spam, fried in a little pork fat, mixed into a batch of Pioneer Instant Peppered Cream Gravy Mix, then topped over toasted bread ... hence the name, “Shit on the Shingle.” Brings back so many fond childhood memories ... ahh, good times!
Shepherd’s Pie: Fried cubed Spam mixed with a lot of fried potatoes and onions, seasoned to taste with salt, pepper and garlic. Folded together with cream gravy, then placed in an oven-tempered Pyrex glass casserole dish. Lace said product heavily with shredded cheddar and Swiss cheese, then top it with a thick layer of mashed potatoes, covering it completely, thus creating Spam Shepherd’s Pie. Bake at 375 degrees for 30 minutes til topping is slightly browned.
Spammed Sauerkraut: It’s fast ... it’s my favorite! In a sauté skillet, melt four ounces butter, toss in one-twelve ounce of Spam (diced) and one large diced yellow onion. Saute’ for a few minutes over a medium flame, then add two-fifteen ounce cans of classic style Sauerkraut (drained). Stir ever so often till heated throughout. I like eatin’ mine with some good ol’ buttered cornbread.
Cheesy Spamble Scramble: Fried diced Spam scrambled with some eggs, topped with shredded cheddar cheese, served with a side of fried hash browns, toast and jam. Instant gratification ... top of the morn to ya’!
Broccoli Cheddar Spamoli: Take a one pound bag of frozen broccoli florettes (you can use cauliflower; California Blend veggies; or just about any other frozen vegetable you may desire), mix with a can of Spam (diced), place in a microwaveable dish, season with salt and black pepper, top with six ounces shredded cheddar cheese, cover with dish lid. Microwave on high temperature for twelve minutes. Should come out steamed perfectly, leaving broccoli bright green and al’ dente ... all real good and chewy-cheesy!
Grilled Spam & Cheese: An All-American classic sandwich with a slight twist. Thin slice your Spam, place it between two slices of American Cheese, then place that between two slices of buttered bread. In a pre-heated non-stick skillet, cook each buttered side till it’s crispy golden brown. Your spam-reffic grilled cheese is now ready to chow down on.
