Some news from America’s culinary king … The Thomas Keller Restaurant Group continues to make concerted efforts to ensure its restaurants are moving towards more energy efficient and environmentally friendly systems.

The K man has had Nordaq Fresh, a Swedish based water purification process installed in several of his restaurants. In addition, The French Laundry utilizes the Ground-Source Heat Pump, a unique geothermal heating system to reduce its dependence on fossil fuels to heat and cool the entire restaurant. And finally, Keller has committed to sustaining the economic viability of local farming, where his culinary garden in Yountville supplies specialty produce to all his restaurants.

Keller embarked upon sustainable business efforts in early 2004 when he installed a geothermal heating system at The French Laundry. The Ground-Source Heat Pump primarily relies on the constant temperature of the earth for heating and cooling. By drawing air out of the building, air circulation is induced, thus preventing fire hazards. During the hot summer months, the cool air from the deep earth acts as a heat sink, absorbing heat generated from within the restaurant. During the winter months, the earth acts as a source of heat for radiators. The system, a renewable and non-polluting energy source, avoids the use of fossil fuels and threats from combustion and carbon monoxide. The fluids used in the pump are also biodegradable and non-toxic ... And that’s why he’s the man.
